Brunnur Distillery

Brunnur Distillery, best known for its gin brand Himbrimi, was founded by Junio Carchini and Óskar Ericsson. Based in Reykjavík, the distillery is relatively small-batch and has built its reputation on its distinctive use of Icelandic botanicals such as organic juniper berries, wild Arctic thyme, angelica flowers, mountain honey, and pure Icelandic spring water.
They produce several expressions, notably a floral, richer Old Tom Gin, and a London Dry Gin version called “Winterbird.” Himbrimi has earned international recognition, including Best Compound Gin in its category at the World Gin Awards in 2019.
The distillery is equipped with two 45-gallon (170 L) jacketed stills with copper Scotch columns. These stills are modest in size, ideal for small-batch production, and allow excellent control over heat, helping to preserve the delicate aromas of the botanicals. Jacketed heating provides precision and consistency, while the copper Scotch columns ensure the removal of unwanted sulphur compounds and contribute to a smoother spirit.
This combination gives Brunnur the flexibility to experiment and refine their gin, striking a balance between clean, crisp London Dry styles and more characterful, aromatic expressions such as their Old Tom. The result is a portfolio that captures the spirit of Iceland’s wild landscape while offering international drinkers a distinctive and award-winning gin experience.
